(Easy Make-Ahead High Protein Breakfast)

If you’re like me, mornings are a mad dash out the door. Some days I don’t even have time to make coffee, let alone cook a full breakfast. But as a busy mom, I still believe that breakfast is the most important meal of the day—especially when you can pack it with protein to fuel you through the chaos. That’s why I’ve started meal prepping high protein breakfasts, and this spinach and feta egg bake has become one of my absolute favorites.
It’s quick, easy to throw together, and it tastes like spinach dip in breakfast form. The cottage cheese makes it creamy and adds a protein boost—perfect for keeping you full until lunch. Plus, it’s family-approved. Even the pickiest eaters will love it!

SUBSTITUTIONS
Dairy-free? Use dairy-free feta and a plant-based yogurt instead of cottage cheese.
Want even more protein? Throw in diced cooked chicken or some bacon.
HOW TO MAKE THIS SPINACH AND FETA EGG BAKE
Start by slicing your onion. Warm a pan over medium heat, add a little butter, and sauté the onions until translucent. Then toss in your spinach—I start with two big handfuls and always end up adding more! Sauté until wilted.

Next, you are going to want to go ahead and crack a dozen eggs into your blender. Now is the time to add your cottage cheese and spices! I keep this simple by only adding salt, pepper, and of course garlic powder. Blend until smooth and creamy. I know a lot of people do not like cottage cheese because of the texture, but blending everything helps disguise the cottage cheese in the egg bake.
Then, spread your sautéed onions and spinach evenly in a greased baking dish. Pour the egg mixture on top, then crumble in your feta. I use an entire small container of feta because mo feta is mo betta 😛
Bake at 350°F for about 50 minutes, or until the center is fully set and the top is golden. Let it cool slightly before slicing. Enjoy your delicious high-protein spinach feta egg bake!

High Protein Spinach Feta Egg Bake
Ingredients
- 12 eggs
- 1 cup cottage cheese
- 4 oz feta cheese (1 small container)
- 1 medium onion
- spinach
- 1 tsp salt
- ½ tsp pepper
- 1 tsp garlic powder
- 1 tbsp butter
Instructions
- Preheat your oven to 350°F
- Slice a medium onion and heat a pan over medium heat with a little butter. Saute the onion until translucent.
- Add fresh spinach to the pan. Cook until wilted and remove from the heat.
- In a blender, crack a dozen eggs. Add cottage cheese, salt, pepper, and garlic powder to the blender. Blend until the mixture is smooth and creamy.
- Spread teh sauteed onion and spinach evenly in your baking dish. Then pour the egg mixture over the veggies. Crumble feta cheese on top.
- Bake at 350°F for 50 minutes, or until the center is set and the top is golden.
- Let cool, slice, and enjoy!
Storage Tips for Egg Bake
Store leftovers in an airtight container in the fridge for up to 5 days. You can also slice and freeze portions—just reheat in the microwave or air fryer!
